Pomegranate: How-To and Why Bother?

How to access the delightful sweet, crunchy jewels of the pomegranate.

  1. With a sharp knife, slice about a quarter inch from the top and bottom of the pomegranate,

  2. Gently score the pomegranate on four sides.

  3. In a bowl of cold water, gently pull the pomegranate into quarters using your hands.

    1. It should come apart easily. If you’re having trouble try scoring a little deeper into the sides.

  4. Using your fingers now and still under the cold water, gently agitate the ruby red seeds from the white pith.

  5. The seeds will sink to the bottom of the bowl, while the pith and peel will float to the top.

  6. Skim all the pith from the top and discard. Drain the seeds in a fine mesh sieve and enjoy!

The entire “pip” is edible (the juicy exterior and the seed) and the whole thing makes for a tart and crunchy addition to lots of things (yogurt, oatmeal, salads, sides, soups, whatever).
