Turnip, Sausage, and Kale Soup
1 large turnip, chopped into small cubes.
1 cup whole milk
1 uncooked sausage link
3 leaves kale, stripped from stem and ripped into bite-sized pieces
Salt and pepper to taste
Place the turnip, milk, salt, and pepper into a medium saucepan. Bring to a simmer and cook until the turnip is fork tender.
Remove the sausage from its casing and cook in a saute pan while the turnips are cooking.
When the turnips are tender, mash them roughly together in the milk.
Add the cooked sausage and the ripped up kale. Season to taste.
This would also work well on a larger scale. It was made quickly when I realized I hadn’t eaten anything in the midst of holiday party preparations.
