Blueberry Treats (pt. 1)
Creamy Blueberry Bites (Fat-Bomb)
2 cups frozen blueberries
1 block cream cheese
½ cup heavy whipping cream
1 tsp vanilla bean paste
1 tsp cinnamon
½ tsp salt
Make a blueberry compote by placing the frozen blueberries in a small saucepan and cooking until the juices have been released, reached a simmer, and thickened. The whole process should take about 20 minutes. Set the blueberries aside to cool, or place in the fridge to chill.
Whip the cream cheese and whipping cream together in a mixer until creamy and slightly fluffy.
Add the vanilla bean paste, 1/2 cup cooled blueberry compote, salt, and cinnamon. Continue to whip until everything is thoroughly combined.
Scoop onto a lined baking sheet or a large plate with a small cookie scoop and place in the fridge until firm.
Store in an airtight container for up to 2 weeks.
These are really great if you have a tendency towards sweet cravings but are trying to give up sugar.
Blueberries are a nicely low-carb fruit, offering antioxidants and fiber, and I try to keep them in my freezer at all times for smoothies or what have you.
Having experimented with the keto diet on and off for about 6-months, I find that the most difficult part was giving up sugar. Fat-bombs are helpful in this regard because you get a slightly sweet treat as well as helping you achieve the correct amount of fat in a day. Obviously you can’t survive on a diet of cream cheese and blueberries alone on the keto diet, but these are a lovely addition.
