Quick Cucumber Salad
1 tsp Rice Vinegar
1 tsp Sesame Oil
1 tsp Sriracha
1 tsp Soy Sauce
1 cucumber
Mix all the liquids.
Thinly slice the cucumber with a mandolin or sharp knife and toss in the sauce.
I make this when I want a healthy snack on the fly. I was thinking it might be good for dinner if I mix it with ground beef or pork or chicken or turkey or tofu.
These ingredients are all things I keep in my pantry. Sesame oil is a nice well-rounded flavor that seems to envelope savory and sweet to me. The rest give me the salty crunchy I often look for in a quick snack. The addition of hemp hearts (as I did here as well) was a nice texture add as well, and I highly recommend them or maybe sesame or flax seed.
