Toad in the Hole (Kind Of)
2-3 lbs sausage links, cooked and cut into bite-sized pieces
2 medium zucchini, cut into bite-sized pieces
2 broccoli crowns, cut into bite-sized pieces
1 cup cream
1 cup water
3/4 cup coconut flour
¼ cup freshly and finely chopped herbs
1 tsp salt
Spread the vegetables evenly on a sheet pan and roast at 375 for 20 minutes. The broccoli should just be browning on the ends.
Dump the vegetables and sausage into a large casserole dish.
Mix all the remaining ingredients in a bowl until no lumps remain. Pour over the top of the vegetables and sausages, and bake at 375 for about 30 minutes. The batter should be browned around the edges.
If you like you can add some cheese to the top as pictured above and stick it under the broiler until it’s bubbly and browned.
This dish is super simple but very comforting. It certainly doesn’t taste the same as traditional Toad in the Hole, but it’s still tasty and has fewer carbs (if that’s a think you care about).
The moral of this recipe, too, is add vegetables. Vegetables add nutrition, flavor, and texture to this casserole, and vegetables also make it a well-rounded full meal.
