Smoothie Tip: DIY Avocado Cubes
I recently found myself in possession of too many ripe avocados. We use them for our daily smoothies and weren’t in the mood for a vat of guacamole, so the only other option was to save them another way.
My mind immediately jumped to the giant bags of frozen avocado pieces I’ve seen irregularly at Costco.
If you want to make them for yourself as I did:
Mash all the avocados (in this case 5) together in a bowl with a Tbl of lemon juice. (Blenders also work well).
Line a quarter sheet pan with foil or parchment and lightly oil it.
Spread the Avocado evenly across the pan and place in the freezer.
After about 20-30 minutes. Take the pan out of the freezer and score the avocado mash with a sharp knife, outlining 1-inch cubes.
Continue freezing until completely solid, break the avocado pieces apart, and store in a gallon sized freezer bag for up to 1 month (probably longer).
Now whenever I see avocados on sale I’m buying as many as I can carry without worrying about them going bad. Why didn’t I think of this before?
