Hot Dog Quiche

Fathead Dough:

1 ½ cups shredded mozzarella

2 oz cream cheese

¾ cup almond flour

1 egg

Pinch salt

Quiche Filling:

1 cup heavy cream

3 eggs

Pinch salt and pepper

1 cup shredded swiss

6 small hotdogs

Make the dough

  1. Melt the mozzarella, cream cheese, and almond flour together in the microwave. Stir to mix thoroughly. Add the egg and salt, and mix thoroughly again.

  2. Press the dough into a pie plate, and refrigerate briefly while mixing the filling.

Make the filling

  1. Roughly chop the hotdogs into bite-sized pieces. Spread evenly on the bottom of the pie crust.  Sprinkle cheese on top of hotdogs.

  2. Whisk the remaining filling ingredients and pour over the top of the quiche.

Bake

  1. Preheat the oven to 350F

  2. Place the quiche on the middle rack and bake for about 40 minutes.  The center should jiggle ever so slightly but not be liquidy.

Cool for at least 15 minutes before enjoying.

Delicious on its own or with a light salad for breakfast, lunch, or dinner.

I love this dough for quiches.  It seems very versitle for multiple fillings, but I don’t see it replacing crust for sweet pies very well.  It’s a little too fluffy for that, and I prefer crispy crunchy crusts for fruit and sweet custard pies.
