Crunchy Spiced Almonds
1 egg white
1 Tbl Maple Syrup or Honey
Generous helpings of some or all of the following ground spices:
Pinch or two of salt
2 cups raw almonds
Stir the egg white, spices, and salt together in a bowl.
Add the almonds, and toss to coat thoroughly,
Spread on a lined sheet pan in one even layer.
Bake at 325, for about 45 minutes, scraping the pan and tossing the nuts every 10-15 minutes. The nuts should seem quite dry and should be nice and crunchy when cooled, not at all chewy.
The egg white gives the nuts (and granola) a clumpy, crunchy texture. It does make the toasting process take a bit longer, but it’s worth it. The timing can be made better by using your ovens convection bake setting if you have one.
Use the spices that you like, but don’t go too crazy. 3 spices are definitely enough for this recipe, and you don’t want the flavor to get muddy by adding too many.
