Mini Pecan Muffins

1 cup packed brown sugar

½ cup all-purpose flour

1 cup pecans, chopped

⅔ cup butter, melted and cooled slightly

2 eggs

1 tsp ground cinnamon

½ tsp each ground ginger and cloves

Pinch of salt

  1. Combine all ingredients and stir until mixed thoroughly.  Make sure you’ve cooled the butter slightly before adding it so it doesn’t curdle the eggs. Set aside.

  2. Preheat the oven to 350F.  Generously butter and flour a mini muffin tin, the batter is very sticky, and fill each mini muffin cup about ¾ of the way up.

  3. Bake for about 15 minutes.  The muffins should be springy and a toothpick should come out clean after being inserted when they’re done.

Serve with a dusting of powdered sugar.

Delightful as a light dessert, or a teatime treat.

Also delicious paired with your favorite whiskey.

This was the baking pan used , and makes this recipe extra festive for the holidays :)  You could probably make one large cake or use standard muffin cups as well.
