Blueberry Treat pt. 2 Blueberry Fool
Blueberry Fool is an English dessert that involves folding fruit, fruit compote, or jam into a simple custard. Newer adaptations allow for simply using whipped cream instead of fussing with a custard.
1 cup heavy whipping cream
1 tsp vanilla bean paste
½ cup blueberry compote (recipe here)
Whip heavy cream with the vanilla and salt.
Plop into a bowl and serve with blueberry compote. As much as you like. Swirl around for pretty colors.
This is a nice mid-afternoon snack or a light dessert. It would also be great with fresh berries as opposed to the blueberry compote.

If you’re experimenting with low-carb or keto diets like I am it’s a great treat when you’re craving ice cream, jam, or if you want to whip up something quick for an unexpected guest (low-carb or not).
In both recipes, the addition of salt is very important. Without it, the flavor falls flat and it’s tempting to add a teaspoon or so of sweetener which it really doesn’t need.
