Mrs. Johnson's Recipes: Caitlin's Favorite Rice
1 cup cauliflower rice
1-2 tsp herb butter
¼ cup chopped toasted nuts
S&P to taste
Place the cauliflower rice in a microwave safe bowl with the herb butter. Cook on high for 1 ½ minutes.
Stir in toasted nuts, taste for seasoning and enjoy!
If you have a head of cauliflower in the fridge and want to make your own cauliflower rice rather than buying a bag:
Cut the florets away from the cauliflower head and discard the core.
Fill a blender halfway up and add the cauliflower florets. Pulse until cauliflower is chopped into a fine grain (you know, rice sized). Drain the water.
Caitlin’s original recipe is for rice grains, pine nuts, green onions and parsley, which would also be yummy, but I replaced everything with what I had in my pantry already. This recipe took me about 5 minutes after chopping the nuts and microwaving the cauliflower as opposed to the original recipe which takes up to 45 minutes.
This is also delicious with spinach stirred in and Parmesan sprinkled on top :)
