Sober October: Sauerkraut Soup
3 pieces of bacon, chopped
1 medium broccoli crown, finely chopped
2 cups sauerkraut
1 tsp coriander
1 tsp red pepper flakes
2 cups broth of your choice
S&P to taste
Saute the bacon until crisp in a medium saucepan. Drain the bacon on a paper towel, and discard all but 1 tablespoon of the fat from the pan.
Add the broccoli to the pan with the bacon fat and saute over medium heat until bright green. Add the sauerkraut and toss until warm.
Add the coriander and red pepper flakes, and toss until aromatic.
Add the broth and bring to a simmer. Taste for seasoning and serve hot.
This seemed like a good recipe for this week’s Sober October theme. Sauerkraut soup is a little bit Oktoberfest and a little bit of that old fashioned “diet” cabbage soup. Healthful food doesn’t have to be boring and bland. Enjoy yourself and eat healthfully at the same time!
