Sober October: Sauerkraut Soup

3 pieces of bacon, chopped

1 medium broccoli crown, finely chopped

2 cups sauerkraut

1 tsp coriander

1 tsp red pepper flakes

2 cups broth of your choice

S&P to taste


  • Saute the bacon until crisp in a medium saucepan. Drain the bacon on a paper towel, and discard all but 1 tablespoon of the fat from the pan.

  • Add the broccoli to the pan with the bacon fat and saute over medium heat until bright green. Add the sauerkraut and toss until warm.

  • Add the coriander and red pepper flakes, and toss until aromatic. 

  • Add the broth and bring to a simmer.  Taste for seasoning and serve hot.

This seemed like a good recipe for this week’s Sober October theme.  Sauerkraut soup is a little bit Oktoberfest and a little bit of that old fashioned “diet” cabbage soup.  Healthful food doesn’t have to be boring and bland. Enjoy yourself and eat healthfully at the same time!
