Pumpkin Week: 30 Minute Pumpkin Curry

1 Tbsp butter

1 Tbsp curry powder

1 can pumpkin

1 can crushed tomatoes

1 can chickpeas

1 can broth of choice

1 tsp salt

½ tsp red pepper flakes

2 heads broccoli


  • Melt the butter in a medium saucepan. Add the curry powder and toast the spices until very fragrant. Add remaining ingredients, except for the broccoli, and bring to a simmer.  Simmer for 20 minutes, stirring occasionally.

  • Chop broccoli into bite-sized florets. Place in a microwave safe bowl or on a plate and microwave for 1 minute on high.

  • Serve the pumpkin curry over the broccoli and enjoy!
