10oz of dark chocolate (at least 60%, go for 70% if you can)
1 stick of butter
1 medium avocado
¼ cup coconut flour
¼ cup cocoa
2 egg yolks
1 tsp vanilla
½ tsp salt
Preheat the oven to 350F, and grease an 8x8 inch pan or small baking dish.
Melt the chocolate and the butter over a double boiler and allow to cool briefly.
Combine the chocolate with all the remaining ingredients in a blender and blend until very smooth.
You may want to scrape down the sides and continue blending to make sure you get the avocado completely incorporated.
Pour the batter into the pan and bake for about 20-25 minutes. I prefer brownies to be slightly underdone so I went for 20 minutes.
As a low-carb high-fat eater I’ve been missing sweets a lot lately. These brownies should not be called “health food” certainly, but they are certainly healthier-ish than a typical brownie recipe, and it makes me really happy to eat a sweet and:
Not feel guilty about having a small indulgence every once in a while and
Not feel like I sacrificed flavor for health because these are actually delicious.
In one small low-carb brownie, there are ~178 calories, ~14g carbs, and ~14g fat.
Compare that to a typical brownie of a similar size that has ~200 calories, ~42g carbs, and ~11g fat.
