The Simplest Peanut Butter Cookie
1 cup PB
¼ cup Sweetener (I used Swerve)
Preheat the oven to 350F
Mix all ingredients in a medium bowl
Scoop onto a sheet pan lined with parchment or foil. Flatten the dough slightly with a fork for those tradish imprints.
Bake for 8 minutes for a slightly chewier cookie or 10 minutes for a dryer crumblier cookie.
These peanut butter cookies don’t need it, but I ended up adding a splash of vanilla bean paste to this recipe as well. If the peanut butter you add doesn’t have salt in it you should add a pinch as well to boost the peanut buttery flavor. Cinnamon might also be a nice touch as well!
