Chunky Garden Salad

1 bunch radishes

2 green bell peppers

½ pint cherry tomatoes

Small bunch of green lettuce or kale

4 slices of thick-cut bacon

Italian or Balsamic salad dressing, to taste


  • Trim the green tops from the radish and cut the bulbs into quarters, cut the bell peppers into ½-1 inch squares, slice the cherry tomatoes in half, and cut your leafy greens into bite-sized pieces (or just rip it up with your hands).

  • Cook the bacon until it’s crispy, and reserve about 2 Tbl of the bacon fat.

  • After the bacon has cooled, toss it with the vegetables, bacon fat and the desired salad dressing.


This is also fantastic with shredded chicken :)
