Zoodle Week: Zucchini Noodles with Olive oil and Lemon

We’ve got to start somewhere for zoodle week, and the most appropriate beginning should probably be highlighting the how-to of the main ingredient. Zucchini noodles.

Massive zucchinis like this one are great for making zoodles because you can get nice long strands.

The best tool for for the job is a julienne peeler. Use it just like you would use a vegetable peeler and make long strands by pulling from the top of the squash to the bottom.

Gather the vegetable strands into a microwave safe bowl, and microwave for 1-2 minutes on high.

Toss them with 2-ish Tbl of olive oil, the juice of 1 lemon, salt, and pepper. Garlic would also be welcome as would fresh herbs.

Ahh, the tastes of summer.
