Nutritious No-Bakes (also they're delicious)
½ cup each whole almonds and pecans
1 cup shelled sunflower seeds
1 cup unsweetened shredded coconut
1 cup ground flax seed
½ cup hemp seeds
1 stick butter
1 cup peanut butter
½ cup unsweetened chocolate
1 cup bittersweet chocolate chips (62%)
½ tsp salt
1 tsp vanilla bean paste
Chop the nuts and spread them out on a sheet pan with the sunflower seeds and coconut. Make sure everything is in one even layer. Toast them at 325F for about 5-10 minutes. Keep an eye on the coconut, it burns quickly.
Place the butter, peanut butter, chocolate, salt, and vanilla in a microwave safe bowl. Heat in 20 second intervals until everything is melted, stirring between zappings.
Stir the melted mixture with the flax and hemp seeds, then stir in remaining ingredients.
Pour the whole mixture into a 9x13 in dish lined with plastic or parchment and cool in the fridge until firm. Should take about an hour.
Chop into small pieces. The chocolate flavor is pretty intense, and the calories are pretty dense with all the nuts and butter and such. Delicious and certainly nutritious in small amounts though ;).
This basic recipe is going to be a fall/winter staple for me I think. It will be great to keep in the freezer for last minute guests as a tea/coffee accompaniment or as a simple dessert board addition.
Add whatever nut/seed combo you like here, and sprinkle some extra coconut on top if you like.
